Many stills began to make as much liquor as possible to sell in the cities, and with as many as 300,000 speakeasies in New York alone there was a large market. The downside of these illegal booze was the low quality and terrible taste. This issue meant an explosion in the creation of new cocktails, many of which are still consumed to this day.
